Why is it that when the cricket is on in Widescreen from Sky Sports UK and
also AFL Football on 506, it uses the ENTIRE screen ?
I would've thought that a widescreen feed would have bars at the top and
bottom of the screen like they do on Digital TV feeds on the Free to Air
Networks ???

You are probably not seeing the sides of the picture. It used to happen with
movies they would show the opening credits with the black bars at the top
and bottom but than broadcast so there were no bars meaning you were missing
the action on the edge of the screen .

Try setting your foxbox to display 16:9 content in widescreen...in the
setup menu.

Aspect Ratio Control= By STU
TV Type=16:9
4:3 Programme Display=14:9
Video Output=PAL
With those settings, when I goto fox footy channel I am getting extra on the
sides of the screen but the top and bottom are still zoomed in and there are
no black bars at the top or bottom.

You do have a 16:9 (widescreen) TV don't you? You should only get
letterboxing with a widescreen signal on a 4:3 TV - it should fill the
entire 16:9 screen (unless it's a movie that's in a wider aspect than 16:9 -
like 2.35:1).

If you have a widescreen TV, nothing on FOXTEL except for the occasional
movie should have black bars at the top and bottom.
You will however get pillar box bars at the left and right occasionally.
