Intermittently, I've noticed that when stationary and idling, that the
tacho bounces beteen about 750 rpm and about 1100 rpm. When I give the
throttle a minor tap, the fluctuation stops and it sits on 750. Any
clue on why this would be happening?

Sticky IAC.

Probably needs a good cleanout. Might also be EGR related.

Pardon? I thought that was an insurance company.

Wow! EGR you say now? I hadn't thought it was that serious. I'd better
get on that PDQ or I'll wind up with SFA.

Idle Air Control. It controls the idle by regulating the amount of air that
gets bypassed around the butterfly to maintain idle speed.

Exhaust Gas Recirculation.

Realistically, if you don't know what they mean then you need a mechanic ;-)
