According to RACV, the AU Falcon is a 3-star car. See

But according to howsafeisyourcar.com the AU Falcon is a 5-star car.

Are they talking about different cars or are they testing the same car
and getting different results?

Neither... they're entirely separate assessments involving different
lots of dummies.

The Australasian New Car Assessment Program (ANCAP) uses crash
testing. The test procedures are compatable with Euro NCAP.

Used Car Safety Ratings (UCSR) are based on the opinions of a few
dickheads at Monash after they've taken at a gander at a couple of
real crashes. ;-)

If you'd looked at the links you posted you wouldn't need to ask!
