I have to admit, it's been a long time since I've been to a video arcade -
mostly when I was a teenager. Back then, the most common type of display
was CRT, with some rear projection as well. Since almost no CRTs are being
made anymore, I'm just curious as to whether arcade games have switched to
LCD or plasma yet?

Well they won't be plasma because of the screen burn-in issue.

I mentioned that rear projection were/are commonly used in video arcades.
Don't they suffer from bad screen burn-in as well?

LCD can also get burn-in if the image is the same for long enough!
