Could someone advise which cable I should run from a central room housing a Foxtel digital TV receiver to a (future) projector. Can I run from the SCART connectors for better quality or simply stick with Foxtel to modulator to tuner to projector (as per analog).

Run a minimum of three RG59 cables. These can then do composite, s-video or
component, be connected to scart, BNC or RCA as the need arises.
You should also run another 2 pair cable for control - either infrared or
RS232 from a central control system.

Why not RG6

Don't use rg59 at least use the double shielded rg6. You will pick up too much interferance otherwise.

I'll run Cat5 for spare (I use IR receivers/emitters through the Quad6 that sends everything back the office with the equipment - in this case an RF point on the other wall).

What is the RG59 / RG6 issue ? It is a 12 m run between points so Quad6 seems to be an inexpensive option.

RG59 is available in double shielding RG59BU) and is perfectly suited
for base-band signals. RG6 has a higher bandwidth characteristics making
it better for RF applications.

Essentially it means RG59 for interconnects and RG6 for antenna & LNB
applications.

You can use RG6 for interconnects, but you won't gain anything because a
high proportion of STBs & display devices still use analog base-band
signals, be it composite, S-video, component YUV or RGB.

Over a 10 metre run it would be OK. However, I would suggest you use a
Belden 1505A or equivalent if you want the good stuff. This cable is swept
to 3GHz during mfr, and is used by the broadcasters for HDTV. If it is all
right for them, then it should be good enough for you.
It is also easier to handle than RG6.
Belden rate the cable for 91 metres with digital HDTV.
