if your reciver supports dolby digital then Optical or coaxial will give you Dolby Digital.

Correct. Mono and stereo can both be output via a digital output (SP/DIF or
TOSlink).
The availablity of a digital output does not imply Dolby Digital (TM). It
never has. Dolby Digital has to be licenced by the manufacturer for it to be
provided.

Not if the STB doesn't support it, it won't.

Also if it's only an SD box the channels don't broadcast in 5.1, although
i've heard that occasional show's are. The Teac i have supports dolby but
being SD only outputs in stereo (although channel 10 has ac-3 available but
none of the shows support it)
I've seen quite a few programs that have AC-3 stereo available. If I select
it on my TEAC DVB-420 I notice a very slight delay compared to the analog
signal (which is fed from the A/V amp to the TV and VCR), and the STB no
longer controls the volume. I'm told that there are very rare occasions
where 5.1 is sent out with SD transmissions, the "Long way to the Top" live
concert on the ABC was one example.
NOTE: trap for young players - when I first connected the STB to my Yamaha
A/V amp via a TOSlink fibre, I thought that was the only Audio connection I
needed. However, the digital signal is not made available to any of the
monitor ports (TV, VCR) so if you want to record the STB via the A/V amp,
you will need to connect the Analog Audio outputs from the STB to the A/V
amp inputs as well.

DD2.0 is bugger all different from MPEG/Musicam. I think the point here is
that although it's possible to have 5.1 on SD, most networks don't provide
it. And that's because bugger all content actually has it in the first
place.

ABC has broadcast a grand total of *three* one-off shows in DD5.1 on SD:
Long Way to the Top, Oils on the Water concert, and some ballet thing. But
that's three more than any other channel.
Bottom line is there's so little even on HD in 5.1 it's hardly surprising
that there's practically nothing on SD.

Optical is Digital Quality and if someone is watching something that is being broadcast in 5.1 and they have the equipment then they will recive 5.1. I know that if you have a SD box then you wont get 5.1 but will still get Digital 2.0 sound. Optical is Digital.

Yes, Optical is Digital, but Optical *is not necessarily* Dolby DigitalTM.
Digital audio can be stereo which is not Dolby DigitalTM, for example. As
you say you can get DD2.0 from some (not all) channels depending on where
you live. And even then your STB manufacturer has to have licensed Dolby
Digital to offer it, so not all do.
And yes, you can get DD5.1 via a SD box *if a stations transmits it*. Which
they don't, except for three rare occasions on the ABC so far.
