I will soon be going across to Foxtells Digital Cable but unsure how
it interface with my existing AV Receiver.
For the people who have this service - what Inputs/Outputs does the
Foxtel unit provide ?

It has 2 scarts, labeled as "TV" and "VCR" and also has the standard
RF and composite. It has spdif also.
The unit also outputs s-video so if your TV does not have scart you
can probably use a scart to s-video adaptor.

I just noticed, made in the Republic of South Africa. That's a first
for me.

Btw, while the picture is a lot better with digital you'll find that a
lot of the channels are still 4:3 such as all the news channels, all
the movie channels such as Showtime etc and most of the music
channels, all the doco channels such as Discovery and National Geo
etc.
I found that a bit of a disappointment, especially with the movie
channels. The channels that allow you to pay for movies are 16:9.

A friend of mine has Foxtel digital, and the unit he has is not the same as the image provided by the last poster. It has 2 scart outputs but no digital coaxial output - only optical. Also some of the connections are on the side of the unit.
So if you want the 5.1 dolby digital soundtracks, you need to have an optical input on your receiver.

Most digital amps have at least one of each,so you should be ok.
