I'm told Sub Woofers are NOT directional..so does that mean it doen't really
matter where you place it in the room ?

Or is there an optimal position for it ?

They are non directional but it does matter where they are placed
A simple way to work out hwre is the best spot is to put the sub in the listining position and play a test tone and move around the room to find where it seems the loudest and place the sub there.Obviously you will need to place it as close as possible but practicable.
If you are serious about the quality of the sound you can use a paramatic equaliser to adjust for the inconsitancies of a room

Yes and No. Any bass frequency above 75-90Hz will be detected by your
hearing to have a particular direction. That's why, (especially if you're
using a satellites + sub combination) the sub should be placed at front of
the room (along the same axis as the front speakers) and preferably in the
corner to assist in minimising room resonances, increase bass response and
correctly position the bass response sonically.

putting it in a corner will increase the amount of bass but could cause
boominess
experiment with it firing into the corner and away from the corner

I have had a lot of luck with it about a 1/3 back firing side ways across
the room

different rooms, different positions

one way some people suggest is to put the sub where you are going to sit,
get on your hands and knees and craw around, the best sounds spot, stick the
sub there.

there is no rule of thumb, experiment, place it in lots of places, make sure
you play with the phase switch, this will be different in different
positions.
