So campers, what's the difference, which one is better and why?

From what I can tell:

UEC is older, much bigger, runs much hotter. Has a led readout that shows
the channel number.

Pace is sleek, slim and fits into small spaces. Has extra digital outputs.
No led readout.

It APPEARS (does anyone want to correct me?) that the firmware does
essentially all the same tricks on both boxes.

Not the UEC box I got!!
Hasn't even got an led readout!
And it is small and doesn't run hot!

So campers, what's the difference, which one is better and why?

It's a lot like Holdens and Fords, they both do exactly the same job well. It's really down to aesthetics and the UEC 1000 (not the UEC 720 rehash "The Family" was referring to) sits better in with my system. I did have a Pace 4200 but it was replaced with the UEC after a capacitor exploded, sounded just like a rifle shot. What you get, Pace 4200, UEC 1000 or UEC 720, is purely determined by what the tech has onboard at the time - Foxtel policy is as you are not buying it, you don't get to choose. Too bad if you have a surround system and the tech only has a truck load of UEC 720's which happened to a friend recently. How hard would it be to start a tech with a mixed load each day, most Foxtel users only get sound through the TV speaker so a 720 is fine but where a tech sees a surround or home theatre system he should at the very least be allowed to use discretion.

For clarity, I'm on satellite.

It looks like the UEC 1000 is for cable. The re-hashed UEC 720 for
satellite?

In other words, do satellite customers get supplied with either the UEC 720
or the Pace? Or are there three options?

There is a UEC 1000 model for satellite as well.

I have the UEC 1000 and im on satellite.I got it installed 2 months
ago.Looks great imo.

My faulty Pace Sat box got replaced with an UEC box. I don't like it,
its big and slow and no 5.1.
I guess I'll just wait for the PVR boxes to rock up and upgrade to the
one with the biggest hard drive.

Which UEC box though? The 1000 or the 720?
