90g (3oz) Butter
175g (6oz) cooking apples, peeled and thinly sliced
150g (5oz) kumquats, thinly sliced
125g (4oz) sugar
3 rosemary sprigs, plus extra to decorate
12x20cm (8in) squares of filo pastry
250ml (8fl oz) water
2 tbsp curacao
1. Preheat the oven to 190oC/375oF. Melt the butter in a frying pan, then spoon 3 tablespoons of it into a cup
2. Add the apples to the pan, together with 90g (3oz) of the kumquats, 2 tablespoons of sugar and 3 sprigs of rosemary. Cook over moderate heat for 5 minutes, until the apples soften and begin to carmelise. Spoon on to a plate to cool and remove the rosemary sprigs
3. Lay 3 squares of filo pastry on top of each other so that the oints are staggered, brushing each sheet with melted butter.
4. Spoon some apple mixture into the centre of the pastry and draw up the edges to form a parcel. Pinch to seal, fan out the points, then brush with melted butter. Repeat with the other parcels.
5. Place the parcels on a greased baking sheet in the preheated oven and bake for 10-12 minutes
6. Meanwhile, bring the water and remaining kumquats and sugar to the boil in a wide pain. cook for 5 minutes, then add the Curacao.
7. Spoon kumquat syrup on each plate and place a filo parcel on top. Decorate with rosemary sprigs.

Dashi - Japanese stock soup
Konbu dashi (Vegetarian dashi )
# 4 cups of water
# 6 inches long konbu
Wipe the konbu (dried kelp) with a clean cloth to remove dirt. (konbu shouldn't be washed under running water.) Soak the konbu in the water in a pot for one to two hours. Put on low heat and bring the water to a boil. Just before the water boils, remove the konbu.
Eggs scrambled:
Mix eggs with milk and a bit of butter, heat frypan put the eggs in stir while cooking on low heat. Until you have fluffy scrambled eggs.......... then eat. :dD
