Depends on whether you have the subs in extracted form, usually .sub and .idx pairs or .srt files depending on which program extracted them. They are extracted from DVDs. There are 2 ways to view them. You can carry them around in seperate files (usually .sub and .idx files) and load them seperately in your player or you can reencode the avi with the subtitles "burnt" into the avi. If you use the second option, there will be a noticable to significant quality hit because you will be encoding a file that has already been encoded. This depends a lot on the quality of the original clip though. If you reencode an excellent quality clip, the reduction in quality will be less pronounced. I use Gknot Rip Pack to encode my avis but you will need to extract the subtitles into seperate files using vobsub and bring them into the project. Vobsub is included with GKnot. I use xvid codec for my encodes so you will need that too. GKnot Codec Pack includes this and heaps of others.

Guides to use these are all over the place but here is a good one that covers everything you'll need and more.
